Minestrone Soup

This soup will definitly fill you up with so many great vegetables, and its extremly healthy.  It’s also fairly simple, and only takes about an 1hour 30min, making it great meal at the end of a busy day.

great Serves: 4

Ingredients:

  • 1/2 onion diced
  • 4 garlic cloves minced
  • 1 small yellow squash chopped into cubes  (slice the squash lengthwise into 3 even strips.  then take your strips and cut horizontally into 1/4-1/2in pieces)
  • 1 green zucchini chopped to cubes (same as the yellow squash)
  • 3 carrots diced
  • 3 medium sized tomatoes diced
  • 21oz of vegetable broth
  • 1 ear of corn
  • 1 1/2 tsp dried oregano
  • 1/2 cup ditalini pasta
  • 1 can of great northern beans (drained and rinsed)
  • 3oz baby spinach
  • salt + pepper to taste
  • Asiago cheese for topping

Directions:

Heat up a little bit of oil in a dutch oven, add the onion in and saute for about 3 minutes. Add in  garlic and oregano sauteing 1 min more.  Add the squash, zucchini, carrots,  and corn then saute 5min.  Once done remove from heat.

Taking 1/2 of the tomatoes and all of the broth, place it into a belender and mix until smooth. Add the mixture into the pot along with the remaining tomatoes and bring to a boil.  Once a boil has been reached lower the heat and simmer for 20min.

Once 20min have passed add in the noodles, and beans cooking 10 minutes more.

Add in salt and pepper as needed, along with  the spinach.  Serve and top with the cheese.
