Banana Chia Pudding

This is a super healthy and hearty breakfast that will start your morning off right and energize you for the day to come.  It is also has tasty flavors from the peanut butter, and banana’s.

Ingredients:

  • 1 cup almond milk
  • 1/4 cup chia seeds
  • 1/2 tsp vanilla extract
  • dash cinnamon
  • 1 banana sliced
  • 2 tbsp PB2 powder mixed with 1 tbsp water
  • 2 tbsp shaved raw coconut

Directions:

Heat the almond milk in a small sauce pan until it comes to a simmer, then turn off the heat and add in the chia seeds, vanilla extract, and cinnamon.  Mix everything together and allow to sit for 10min so the chia seeds can expand.  Once ready place the thickened chia seeds in a bowl and top with the sliced banana, PB2 mixture and the coconut then enjoy!
